The Culinary Institute of America (CIA) was founded in 1946 as the New Haven Restaurant Institute in downtown New Haven, Connecticut. It was moved to its current location in Hyde Park, New York in 1970. Hyde Park is 15 minutes north of Poughkeepsie on the Hudson River. The CIA also has a branch campus, the Culinary Institute of America at Greystone, in the heart of Napa Valley in Helena, California.

The Culinary Institute of America is a private, not-for-profit college dedicated to providing the world's best professional culinary education. Excellence, leadership, professionalism, ethics, and respect for diversity are the core values that guide the CIA. The Culinary Institute of America teaches students the general knowledge and specific skills necessary to live successful lives and to grow into positions of influence and leadership in their chosen profession.

The Culinary Institute of America offers associate and bachelor degree programs in culinary arts and baking and pastry arts. The associate degree program in either culinary or baking and pastry arts is 21 months in duration. The bachelor degree program in either discipline is 38 months in duration.

All programs include an 18-week externship where students can gain valuable, real-world, experience. Students also acquire experience in the CIA's award-winning Escoffier Restaurant as well as their other on-campus restaurants, the Ristorante Caterina de' Medici, St. Andrew's Café, the American Bounty Restaurant, and the Apple Pie Bakery Café sponsored by Rich Products Corporation. Prospective employers prefer job candidates with real-world experience.

In addition, the Culinary Institute of America offers two certificate programs, a baking and pastry arts certificate program and an accelerated culinary arts certificate program (ACAP). Both are 30 weeks in duration.

The CIA's culinary arts program prepares students for careers as a chef, caterer, culinary educator, food stylist, food writer, food service entrepreneur, product development specialist, television personality, and more. The baking and pastry arts program prepares students for a career as an artisan bread baker, bakery/café owner, baking and pastry instructor, caterer/event planner, chocolatier, food stylist, food writer, pastry chef, and and more.

For students who may require financial assistance to pay for their education at the Culinary Institute of America, there are many alternatives available. Financing options for qualifying CIA students include:

92% of CIA students receive some form of financial assistance. The Culinary Institute of America has a Program Participation Agreement with the US Department of Education for eligible students to receive Pell Grants and other federal aid (e.g., Direct Loans).

The Middle States Commission on Higher Education is an institutional accrediting agency recognized by the U.S. Department of Education and the Council for Higher Education Accreditation. The CIA is also accredited by the Accrediting Commission of Career Schools and Colleges of Technology (ACCSCT) and holds an Absolute Charter issued by the New York State Board of Regents.
