The Accelerated Training System at the Kitchen Academy is a 40 credit, five-step program that can lead to a Professional Culinary Diploma in as little as 30 weeks. Each of the steps lasts six weeks. The five steps consist of:
- Professional Culinary Arts I
- Professional Culinary Arts II
- Culinary Techniques (cold cuisine techniques, and baking and pastry techniques)
- Advanced Professional Culinary Arts
- Externship (6 weeks in a work environment)
