Kendall's curriculum provides students with a solid culinary foundation, culminating in an opportunity to cook in a fine dining setting overlooking the city of Chicago. Advanced courses and electives offer students the opportunity to learn more about specific cuisines, techniques, and careers of interest.

At Kendall, tests aren't just for students. All culinary faculty must pass a rigorous practical exam in order to teach at Kendall.

The culinary school has 14 new commercial kitchens, each designed to help students learn and practice specific culinary techniques.

Bachelor of Arts in Culinary Arts: Kendall College offers a Bachelor of Arts program for the future culinary executive. As with many other industries, the bachelor degree is becoming the standard for education in the food service industry. In order to be a leader in the field, graduates must possess business and management skills in addition to their culinary skills.

Associate of Applied Science in Culinary Arts: This six-term culinary associate degree program educates students in the essential skills and knowledge needed for the working chef. Experienced faculty guide students from basic skills through to advanced culinary techniques.

Associate of Applied Science in Culinary Arts Accelerated Program: This five-term culinary associate degree program is designed for students already possessing a bachelor's degree. Similar to the traditional associate's degree, this program educates students in all of the essential skills and knowledge needed for the working chef and is taught by the same experienced faculty.

Associate of Applied Science - Baking and Pastry Arts: Kendall's two-year associate degree in Baking and Pastry Arts offers a comprehensive study of baking and pastry and is located in Kendall's new, state-of-the-art bakeshop facilities in Chicago. This degree will prepare students for a career in a professional pastry kitchen or bakeshop, or in a business with baking and pastry product lines.

Culinary Arts Certificate Programs: The culinary arts certificate programs offer students an opportunity to acquire basic skills and to gain first-hand experience in the kitchen. Many individuals who decide to pursue a certificate degree are exploring a career change and want exposure to the real world of professional cooking or baking. Others already have experience in the industry, but want to specialize in a particular area.

Hospitality Program: Kendall College has an exclusive relationship with the Les Roches Hotel Management School, making Kendall the first and only U.S. school to offer the world-renowned Les Roches program. Kendall's partnership with Les Roches offers students access to study abroad at the Les Roches campuses in Bluche, Switzerland and Marbella, Spain.

Bachelor of Arts in International Hospitality Management With Swiss Hotel Association Diploma-Honors Program: In partnership with the Swiss Hotel Association Hotel Management School of Les Roches, Kendall offers a rigorous, comprehensive course of study for the student seeking a global perspective of the hospitality industry. This program requires one year of study in Switzerland, the birthplace of hospitality education, including a 5 months internship in a Swiss Hotel. Successful completion of the junior year in Switzerland earns the student the highly sought after Swiss Hotel Association Diploma.

Bachelor of Arts in Hotel Management: With over 45,000 hotels in 175 markets, ranging from bed & breakfasts to 6000 room hotels in Las Vegas, the hotel industry in the U.S. and throughout the world has experienced unprecedented growth, which bodes well for the student who selects this course of study. At present the demand for managerial candidates far outpaces the supply of qualified applicants. This curriculum prepares the students seeking positions as rooms' division managers, executive housekeepers, directors of sales and marketing, and human resource managers.

Bachelor of Arts in Convention and Meeting Planning: Convention and meeting planning is one of the fastest growing segments of the hospitality industry. Associations spend in excess of $54 billion a year holding over 215,000 meetings ranging from simple seminars to exhibitions, trade shows, and conventions. Chicago with Navy Pier and McCormick place is arguably one of the largest trade show/convention venues in the country. Kendall College offers this curriculum to prepare students seeking positions as corporate meeting planners, managers of convention and visitors bureaus and special event planners.

Bachelor of Arts in Food & Beverage Management: The food service industry is the largest and the most diverse sector of the Hospitality industry. It grows at an average rate of 7.6% yearly and includes both commercial and noncommercial operations that provide food and beverage in a variety of settings from restaurants, casinos, national parks, catering companies, schools, universities, and hospitals. This program prepares students for the positions of restaurant managers, food & beverage directors, catering managers and foodservice consultants.

Bachelor of Arts in Culinary Management: This program is designed for students seeking to pursue a career as executive chef or food & beverage director. After 8 quarters of rigorous training in classically based cooking techniques, the student will move on to the Hospitality Management curriculum, the students progress to the hospitality management curriculum, where emphasis is placed on operations management, financial management, and quality assurance in service delivery. This track provides a thorough training for both front and back of the house operations.
